Moor Beer, led by Justin, have been great inspirations to us over the years with their progressive approaches to canning, their unfined and super flavoursome brews and creative styles. Above all, they’re great advocates for the black IPA style!
When we finally got together to brew something it was inevitable that this would be our style of choice. We chose to follow a method neither of us had in our black IPA endeavors to date, with no dark malts going into the mash tun whatsoever. We added a portion of sinimar to the whirlpool and then topped up further in the fermenter.
The result is a black IPA as we believe they should be – brimming with hops! We used a blend of our favourite, classic varieties of Centennial, Citra, Mosaic, Simcoe, Vic Secret for a balance of soft tropical fruit, resinous pine, and zingy citrus!
