Tripartite is a Pyment style mead made with my three favorite red wine varietals. 40% Cabernet Sauvignon from California, 40% Malbec from Chile and 20% Shiraz from Australia.
In keeping with the theme of three; we’ve used three different oaks. American, French and European/Slovakian oak all in the mix.
Each of the three oaks is toasted to a unique level of char; again, keeping with the theme of three.
We fermented Tripartite with a strain commonly used for high intensity Shiraz and South African Pinotage.
