Spontaneously fermented cherry wine made with whole cherries of the variety “Stevns” from the 2019 harvest season. It takes about 2,5 kgs of cherries to make 1L of finished wine.
The famous variety is known for its small size, deep red/burgundy color and its distinctively complex flavor. It shouldn´t be taken lightly that it has been named “Nordic Grape” by many.
This batch includes wines from various production methods. All spontaneously fermented, but a big part of the final blend has also gone through carbonic maceration.
